Aloo Methi

Aloo Methi

I am in love with methi.. love the smell when it is being fried. So here is another one of my all time favorite dishes

You Need

Potato - boiled and cubed 2 cups
Methi - Finely chopped 2 cup
Onion - finely chopped 1/2 cup
Tomato - finely chopped 1/2 cup
Garam Masala - 1 tbsp
Red chillie powder - 1 tbsp
Salt to taste
Oil - 1 1/2 tbsp

Heat 1/2 tbsp oil in the pan
Fry the methi leaves and keep them aside
Heat another 1/2 tbsp oil in the same pan
Add onion and fry till golden brown
Add tomato and fry for 2 mins on med-high flame
Add the remaining oil and fry for another 2 mins till the tomato misture starts turning into pulp
Add garam masala, chillie powder salt and mix well
Add the potato and mix well
Now cover and cook on low flame for 3 - 4 mins
Serve hot with Phulka :)

Chattambade (Dal fritters)

For this month's PPCS I had to do this tasty vada from Shama Nagaraj's blog.

I have slightly modified the recipe to suit our taste buds

You need:
Channa dal - 1 cup
Urad dal - 1/4 cup
Green chillies - 3 finely chopped
Coriander - finely chopped 1 tbsp
Onion - 1 medium finely chopped
Ginger - small piece finely chopped
hing - 1 pinch
Salt to taste
Oil for deep frying


Soak channa dal and urad dal in water seperately for 1 - 2 hrs.
Grind the dals coarsely with salt.
Add the onion, coriander leaves, green chillie, hing, ginger and hing.
Mix them well.
Wet your hands with water
Make small balls and flatten them on your palm.
Meanwhile ,heat oil in a kadai. Once hot,deep fry vadas.
Fry them till it turns golden brown and crispy .
Serve hot with chutney or sauce

Roti Churma..

I have seen by boss bring this to office almost every day for breakfast and lunch and when we asked what it was he said it is Churma.. and told how it is made in his lanuguage ..
"Roti ko pieces mein kaatke usme masala daaal dehte hai bas!!"

So here goes my version of Roti Churma

You Need:

Roti / phulka - 8
Onion - 1 large thinly sliced
Garam masala - 1 tbsp
Pav bhaji masala - 2 tsp
Red chillie powder - as per taste
Coriander leaves - 1 tbsp chopped 
Oil / ghee

Shred the Roti into thin slices (I rolled 4 rotis together and sliced them with a knife)
Heat about 2 tbsp oil in a wok
Add the roti slices and fry them till they become slightly crisp
Remove and keep it aside
Heat 1 tsp oil again in the same wok
Add the onion and fry till brown
Add the masala and fry for a min or two on medium flame
Add these to the roti slices and mix them well (using hands will give you better results)
Add salt mix well
Garnish with Coriander
Server hot with a bowl of curds.
